The skirt steak is really a smaller, thinner version of the flank steak. It can be used in much the same way. Because of its size and thinness it is very easy to overcook. Remove it from the heat before you think it is done. These wonderful little Skirt Steaks are dry aged, flash frozen and hand selected. Ships frozen in a vacuum sealed package, 1 per package.
