The earliest and most delicately flavored of our winter squashes, Delicata lives up to its name. A light texture cooks quickly and packs a sweet intensity beyond its small size. With skin so tender it can be eaten, these cook up best when slow roasted or baked in the oven, though they also fare well when pan-fried with rosemary.
