Purple (aka Graffiti) Cauliflower can be used any way you would White Cauliflower: mashed, steamed, roasted, crumbled, etc. The color difference is due to higher levels of the antioxidant anthocyanin, which can be found in many red/purple vegetables and in red wine. It sometimes has a subtle nutty flavor compared to its more common counterpart, but its main advantage is eye-appeal on the plate.
