Vaona's Paverno Amarone is an iconic rendition of this unique Italian red wine style. In Amarone, the indigenous grapes of Corvina, Corvinone, Rondinella, and Molinara are harvested at peak ripeness, packed in wooden boxes, and allowed to slowly dry for up to 4 months before pressing. This concentrates the flavors and sugars, making a uniquely intense, rich, and complex wine. This wine has intense aromas of black plum, blueberry jam, leather, and baking spices. The palate is full-bodied, almost viscous, with rich and warming fruit matching the aroma, and assertive tannins. Serve very slightly chilled with braised beef or roasted mushroom ragu.
