These small fish are bright golden to silvery in color, and give off the distinctive odour of cucumber. They get their name because they spawn at night along sandy beaches of the Pacific Coast from Point Arguello in central California to southeast Alaska.
Local Chefs delight in using this fish for their "Fries with Eyes" dishes. Frying them whole is really the way to go for these guys. You can eat the head, bones, tail, every bit of the fish is packed with deliciousness.
