The English Shelling Peas are great for snacks, but cooking them converts starches into sugars, making them even sweeter. Their texture can remain much firmer than their frozen counterparts, if they're not cooked for too long. The pods on English Peas are generally too fibrous to eat, unlike Snap Peas.
