Our European-style, Organic, Unsalted Butter is freshly churned in small batches at our own creamery. Our Organic Unsalted Butter is rich, sweet and creamy, with 85% butterfat content and extremely low moisture levels. Butter with lower moisture content results in flakier pastry that rises higher and browns more evenly. This is the chefs' butter because it doesn't burn as easily as other butters. We make it in small batches in our old-fashioned 1950s butter churn.
