Pork Liver (Frozen)

Sonoma County Meat Co.'s Pork Kidneys come from Stone Valley's sustainably-raised and vegetarian-fed, antibiotic- and hormone-free Berkshire hogs. Heart is a lean muscle with a nice fat cap, and tastes more like lean pork than it does like most other organ meats (think kidney or liver). To avoid toughness, cook it fast on the grill or in a hot pan, or very slowly, in a braise or roast.
