A favorite among fishmongers, sablefish (also known as black cod) is known for its rich oil content and its velvety texture. We send out our fillets with the skin on and scales removed, because the skin is delicious when salted and cooked until crispy. Sablefish is famously good with a
miso glaze, but this is a forgiving fish that will hold up beautifully to any cooking method. It's hard to mess this one up!
