Fresh Rock Cod

Rock cod is a general term that applies to the nearly 70 individual species of rock fish that swim along the coast of California. In this case, we are talking specifically about black gill rock fish (sebastes melanostomus), caught by hook and line and landed in Ft. Bragg. This is a light, flaky, and delicious fish that does best when cooked quickly over high heat. It's perfect for tacos, curry, or any sort of deep frying. The fillets will arrive to you ready to eat with skin and bones removed.
