Bring a large pot of salted water to a boil. Pop fava beans out of their pods. Drop them into boiling water for no more than 30 seconds (less if they are very small), then scoop out into an ice bath. When they are cool enough to handle, peel the tough outer skin away to reveal the bright-green bean inside. Add them to salads, grain bowls, pesto, or just eat out of hand!
Heat a grill or a large cast-iron pan until it is very hot. Toss whole rinsed favas with a glug of olive oil, then lay flat on the grill for 4-5 until they bubble and start to char. Flip them and repeat. Serve in their pods; it’s fun and easy to pop the beans out and eat!
Pop fava beans out of their pods, then gently stew them in oil and a bit of water over low heat for 8-10 minutes. If the water starts to evaporate, add another tablespoon or two. This technique works perfectly for vignarolas and other simple veggie stews.
