1 pint strawberries
1 orange, juiced
8 oz mascarpone
3 tbsp powdered sugar
2-3 tbsp unsalted butter
2 pieces of matzah
A few sprigs mint
Slice strawberries and combine with some of the orange juice. Set aside to let them macerate.
Mix mascarpone with powdered sugar and a tablespoon of the orange juice.
Melt butter in a pan over medium-high heat. Add the matzo when the butter is melted, and fry until they are crispy and golden-brown. About 1 minute on each side.
Assemble shortcakes: spread a generous layer of mascarpone on each piece of fried matzo, then top with sliced strawberries and mint. Dust powdered sugar over the top for an extra touch of sweetness!
