Peak Season Spring Produce

No seriously: give peas a chance.
We've got peas and asparagus galore, but don't forget about the last of this year's squash and the rare and wonderful salsify! Those sprintime veggies are so sweet and good on their own that they barely need any preparation at all. Salsify, on the other hand, needs a few minutes simmering in water, but once it's tender, chop and sautee in butter for a silky, parsnip-y treat.
