Grilled Peaches with Ricotta and Honey

With almost tart sweetness, peaches welcome the richness of fresh ricotta. It's a mild cheese, so we've dressed it with a drizzle of honey, pepper, and flaky salt for texture.

1 dozen peaches or nectarines, halved and pit removed

Olive oil

Pinch of flaky salt

4 ounces ricotta

3 tbsp Honey

Step 1

Pre-heat your grill or grill pan over medium-high heat. Toss peaches with enough olive oil to coat, and season with sea salt.

Step 2

Place peaches cut-side-down on the grill or pan and sear until almost blackened. If using a stovetop, cook 2 minutes, flip, and cook for a minute. If using a grill, cook for 2 minutes with the lid down without flipping.

Step 3

Remove from the pan, let cool, and serve with a generous dollop of fresh ricotta. Top with a drizzle of honey and pinch of flaky salt.
