1 dozen peaches or nectarines, halved and pit removed
Pinch of flaky salt
4 ounces ricotta
3 tbsp Honey
Pre-heat your grill or grill pan over medium-high heat. Toss peaches with enough olive oil to coat, and season with sea salt.
Place peaches cut-side-down on the grill or pan and sear until almost blackened. If using a stovetop, cook 2 minutes, flip, and cook for a minute. If using a grill, cook for 2 minutes with the lid down without flipping.
Remove from the pan, let cool, and serve with a generous dollop of fresh ricotta. Top with a drizzle of honey and pinch of flaky salt.
