2 cups day-old rice
1 egg, beaten
Aromatics: finely-chopped ginger or garlic
Add-Ins: scallions, soy sauce, chopped vegetables (carrots, peas, zucchini), shrimp, scallops, fish, shredded chicken
Garnish: cilantro, soy sauce, sesame seeds
Add a glug of vegetable oil to a pan and heat over high heat. When the oil is very very hot, add the ginger, garlic and scallions. Cook together until the garlic starts to turn golden brown, about 2 to 3 minutes.
Add whatever vegetables, fish or meat you’re using and cook for another 3 minutes. Add the rice and soy sauce and stir fry everything together for another 3 to 5 minutes.
At the end, pour in the egg and let it set for a minute, before stirring to incorporate it. Finish with cilantro and soy sauce to serve!
