From the Kitchen: Building Blocks of Fried Rice

It's time to put those fridge dregs to use. Here's how to transform leftover rice and any rogue vegetables and protein you have on hand into a super simple weeknight fried rice.


2 cups day-old rice

1 egg, beaten

Vegetable oil

Aromatics: finely-chopped ginger or garlic

Add-Ins: scallions, soy sauce, chopped vegetables (carrots, peas, zucchini), shrimp, scallops, fish, shredded chicken

Garnish: cilantro, soy sauce, sesame seeds

Step 1

Add a glug of vegetable oil to a pan and heat over high heat. When the oil is very very hot, add the ginger, garlic and scallions. Cook together until the garlic starts to turn golden brown, about 2 to 3 minutes.

Step 2

Add whatever vegetables, fish or meat you’re using and cook for another 3 minutes. Add the rice and soy sauce and stir fry everything together for another 3 to 5 minutes.

Step 3

At the end, pour in the egg and let it set for a minute, before stirring to incorporate it. Finish with cilantro and soy sauce to serve!
