1 package soba noodles
2 carrots, peeled and cut into matchsticks
½ bunch scallions
1 garlic clove, grated on a microplane
½-inch chunk ginger, grated on a microplane
2 tablespoons soy sauce
Juice of 1 lime
2 tablespoons sesame oil
1 avocado, sliced
2 Early Girl tomatoes, cut into 1-inch chunks
1 small zucchini, sliced into thin half-moons
Cook soba according to package instructions.
In a small bowl, combine the garlic, ginger, soy sauce, lime and sesame oil. Whisk until well combined and set aside.
When the soba is done, strain and place in a large bowl. Toss with the dressing immediately so the noodles don’t stick to each other then add the carrots, scallions and zucchini. Taste and adjust for salt and acid. Finish with a shower of sesame seeds and avocado slices!
