Scribe's Atlas East Cabernet Sauvignon comes from fruit grown along the eastern slopes on Atlas Peak in Napa. Even for this bigger style of Cabernet, Scribe's approach to winemaking remains consistent. They harvest the fruit at low sugar levels to balance the wine’s powerful structure and depth with brightness. It is vinified in steel and then aged in oak. The finished wine has aromas of blackberry, pepper, and a hint of vanilla, which come through on the palate as well as plum, cherry, baking spice, wet earth, and minerality. Full-bodied yet balanced, Atlas East Cabernet Sauvignon has low tannins and acidity. Pair it with flavorful dishes like roast meats, barbecue, braises and grilled marinated veggies or enjoy its complex, balanced flavors alone.
