These sausages are made from the ham and picnic shoulder. Riverdog hogs live in green, open pasture, under the shade of valley oaks and black walnut trees. The breeds raised at Riverdog include York, Duroc, Chester, Tamworth, Hampshire and European Wild Boar and are developing our own Riverdog Red breed. They are fed a mix of dry-farmed grain, nuts, fruits and veggies from our fields, pelletized organic feed, Cowgirl Creamery whey, and ice cream from Three Twins, reaching full size at 8 months. Riverdog Farm's hogs are CCOF certified organically raised animals. Because meat is processed in a non-organic facility, the pork is not certified organic.
