Notes From The Producer
This offering comes from the section of the Esperança farm where Bruno Souza grows his Topázio coffee - a yellow-cherried Brazilian hybrid of Mundo Novo and Catuaí. The “chocolate” in this coffee is attributed to the unique processing. After harvesting and sorting, the ripe cherries are bagged tightly together where they begin their fermentation process in a nearly anaerobic environment. After a few days of maceration, the soft, dark cherries are depulped. The coffee is then laid out to dry on a special mesh lined clay patio, which buffers swings in humidity and temperature as the coffee slowly dries. We think this is one of the finest single origin espressos from Brasil ever offered, and hope you’ll agree!
