These grass-fed, pastured lambs are able to grow slowly and naturally, without antibiotics or hormones. Think of lamb steaks as the "ribeye" of lamb—this premium cut is tender, flavorful, and incredibly easy to prepare. Rub with salt, pepper, and herbs (fresh rosemary, thyme, and oregano are all great options, or pull out sumac and za'atar for a more Middle Eastern flavor palette), then sear in a cast-iron pan until just medium-rare.
