Fresh Wild Local Albacore Tuna is a delicious fish which lends itself best to grilling or searing cooking applications. Fresh Albacore has a mild to medium flavor profile with firm flesh and large flakes. Like other tunas, it has a "steak-like" texture.
The season is now under way, coming to us from the San Francisco Coast up to the California/Oregon (Klamath) border. Wild Local Albacore is a premium tuna, the short season only runs between June and October. These fish are sashimi quality, so I would definitely utilize them as such. Although, you can cook them any way you like. Sashimi, crudo, carpaccio, or tataki (quick seared).
