New potatoes are potatoes that have been harvested fresh before their skins have begun to cure, leading to delicate skin and flavor. Yukon Golds are a classic new potato with their characteristic pink eyes and versatility. They are well suited to any cooking method: boiling, baking, frying, roasting, and even grilling. This year has been an excellent year for new potatoes on our farm.
Please note: David and his crew at Oak Hill Farm prefer not to wash his potatoes before sending them to us. Washing new potatoes shortens their shelf-life and can damage the tender skins. They're grown in pretty light soil, though, so they should be easy to clean with a quick rinse in your kitchen sink!
