These spuds are a delicately flavored, creamy yellow-fleshed variety great for salads, roasting whole, or boiling. Because they're newly dug and don't yet have fully cured skins, they should be used within a few days of delivery and kept in the fridge until use.
Please note: David and his crew at Oak Hill Farm prefer not to wash his potatoes before sending them to us. Washing new potatoes shortens their shelf-life and can damage the tender skins. They're grown in pretty light soil, though, so they should be easy to clean with a quick rinse in your kitchen sink!
