Our chips start out
as dry organic yellow corn, which is cooked overnight through the centuries-old process of nixtamalization and then ground
into masa on our stone molino.
Hand-shaped tortillas are cooked one
by one on the plancha, then cut and fried into crisp chips.
That’s it – corn, rice bran oil, salt, a huge stone mill, some lovely tortilla ladies and a
lot of love.
