These Castelvetrano Olives are large and green, with a mild, buttery flavor that makes them popular table olives (though they are also used to produce olive oil). The end products are “sweet” olives, due to their low salt content, very firm and crunchy, with their original deep bright green color retained. They're primarily grown in Sicily, where they are more commonly known as Nocellara del Belice olives.
