A traditional Italian staple, pancetta is often used in pasta dishes and on pizzas—fried up like bacon, it looks like a crispy little pinwheel. It's made of pork belly rolled into a log and cured. La Quercia uses vegetarian-fed, antibiotic-free pork from Heritage Acres Foods and cures it with sea salt, juniper berries, and bay leaves, giving the sweet meat an herbal kick. Slice it into cubes or lardons for classic carbonara, or render it for roasts and pan sauces.

We started La Quercia to create premium quality American prosciutto, then applied what we learned to other cuts of pork. Our appreciation for cured meats grew out of the three and a half years we lived in Parma, Italy, prosciutto's area of origin, where we saw how the careful treatment of fine materials resulted in an accessible, sublime and entirely regional cuisine.
