KC Labs is Kivelstadt Cellars' experimental side project and is all about bucking the traditions of California wine. There's no better example of this than their Zinfandel. The fruit is organically grown at Venturi Vineyard in Mendocino, and is harvested early then allowed to ferment carbonically without being crushed. This process allows them to take what is normally a jammy, tannic, and high-alcohol variety and turn it into a light, fresh summertime wine. Served chilled, this wine will challenge your perceptions of what Zin can, and should be. Pair with anything coming off a grill.
