Jasper Hill Farms' Cave Aged Vermont Cheddar is a collaboration with Cabot Creamery, one of the first family farm cooperatives in Vermont. Cabot helped Jasper Hill Farms construct their "The Cellars" facility for aging, ripening, and finishing cheese. The team at Jasper Hill selects each batch of this modern cheddar recipe, then ripens it in a cave that's calibrated to develop the perfect balance of savory depth, lactic brightness, and salted caramel sweetness. Pair this spectacular cheese with tart apples, American pale ales, and medium-bodied red wines.
