Chioggia beets have beautiful pink skin and when cut open on the diagonal display white and pink concentric circles. They are considerably lighter, less intense, and do not stain as intensely as the red beets. We recommend preparing the different colors of beets separately from each other in order to maintain their individual colors and flavors!
