Sage has a savory, slightly peppery flavor and makes a great addition to any roast, marinade, pan sauce or stuffing. Grind the leaves in a mortar and pestle or chop then finely to use it in a dry rub, or gently crisp whole leaves up in a hot pan with a little oil to scatter on top of any dish for an extra boost of flavor.
