Fresh Bay Leaves are pungent and slightly bitter, adding herbal, floral aromas to dishes. Use the leaves whole in soups, stews, and sauces, in a pot of beans, rice, and other grains, or on roasting meat to add flavor. Remove the leaves before serving; they won't hurt you, but they are tough and bitter to bite into whole.
