Packed with kale, tomatoes, sausage, and good ol’ bone broth, this soup doesn’t ask too much of you (just 10 minutes of prep), but gives so much back in return.

Step 1
Heat a drizzle of olive oil in a large soup pot over medium heat. Add the Portugese sausage and cook until the fat has rendered, about 2 minutes. Add the onion and garlic, and stir. Cover and let cook over medium-low heat for 5 minutes until soft. Add a bit more oil if the pan looks dry.
Step 2
Meanwhile, wash and cut potatoes into ½” cubes. Turn the heat up to high and add half the can of tomatoes, potatoes, and 3/4 of the container of chicken stock. Stir well and bring to a simmer. Season with salt and pepper, then reduce heat to medium low and cook for 20 minutes.
Step 3
Meanwhile, wash and trim the kale. Slice into thin ribbons, ribs and all. After the soup has simmered for 20 minutes, add the kale and simmer for another 5 minutes.
Step 4
Wrap the pita in foil and warm in a pan over the stove.
Step 5
Pierce the potatoes with a knife to test for doneness, and serve in bowls with warm pita.
