Baked potato night gets a whole lot sweeter when you use superfood spuds. Load ’em up with beans, cheese, bacon, and avo—and let a pat of flavored butter melt down into the mix.

Step 1
Preheat the oven to 475°F. Line a sheet pan with foil. Rinse the sweet potatoes, rub with olive oil, season with salt, and prick with a fork. Place the sweet potatoes on the prepared pan and bake until soft, 35 to 40 minutes.
Step 2
Meanwhile, rinse and drain the black beans, and season them with a pinch of salt. Peel, pit, and slice the avocado. Slice a few of the green onions. Roughly chop the bacon ends.
Step 3
Warm a small frying pan over medium-low heat. Add the bacon, and cook until crispy, breaking it up with a spoon, 5 minutes. Transfer the bacon to a plate lined with paper towels.
Step 4
When sweet potatoes are ready, split them down the middle. Spread with the cilantro-lime butter, fill with the black beans, and sprinkle with the jack. Return the pan to the oven to melt the cheese and let the beans warm through, 5 minutes longer.
Step 5
Transfer the sweet potatoes to plates, top with the avocado slices, a sprinkle of green onions, and the crispy bacon, and serve warm.
