That doesn't just have to be greens: croutons are a great shortcut to panzanellas (bread salads) made with stone fruit chopped roughly, a handful of herbs (basil and parsley are great!) and a generous drizzle of olive oil. They're also perfect for topping soups or just for snacking on as you cook.
