Lingot de Poitevain takes everything Fromagerie Beillevaire knows about making classic ripened goat cheeses, and applies it to sheep's milk. This cheese has a dense yet creamy paste that gets gooey near the rind. This cheese has decadent and savory flavors, just a mild hint of tanginess, and an herbaceous and umami finish. A great addition to any cheese plate, this also pairs well with apples, pears, and rosé.
