Fleur de Re

This classic example of a French goat cheese is gooey around the outer edge near the rind, with a slightly cake-like texture in the center. It's and grassy, with a bit of funk. Pair with an unoaked Chardonnay, and serve at room temperature to allow the fullest expression of flavor.

Ingredients: pasteurised goat's milk, salt, lactic ferments, animal rennet.
