When a date seed falls and sprouts (also called seedlings), a new date variety is born. Our friends at Flying Disc Ranch cherish these new varieties and their distinctive characteristics. One of these new varieties is called Amber.
Before they dry out completely in the desert sun, they are soft and very juicy, similar to plums. Once dried, they have a wonderful chewy bite. You will notice a mellow sweetness that has a hint of cinnamon, making these dates an excellent addition to an arugula salad.
