Our raspberry ricotta cake is reminiscent of cheesecake, but lighter and fluffier. It's not overly sweet, is studded with fresh, organic raspberries throughout and is just plain delicious. It makes the perfect accompaniment for brunch, served with tea, or for dessert. Cake should be stored in the refrigerator.
