The d'Anjou pear (sometimes known as the Anjou pear), is sweet and juicy when ripe, with hints of a citrusy brightness, but the flesh is dense enough to hold up well to baking or poaching. The best way to test for ripeness is the apply gentle pressure to the neck of the pear, looking for the flesh to yield ever so slightly.
