Cracked, misshapen, or affected slightly by harmless (but hungry!) bugs in the ground, these beets are perfect for juicing. While they couldn't make it onto Fifth Crow's farmers' market tables, their lack of skin-deep beauty has no bearing on their flavor. They're perfect for juicing or, if you don't mind a bit of a funky appearance, they'll be just fine for baking, boiling or shredding into salads.
