A close relative of the Jerusalem Artichoke, Yacón Tuber has a sweet taste and a floral aroma. It looks like a sweet potato, but its crunchy, juicy and refreshing texture is perfect for slicing thinly or shredding into salads raw. 

These Yacón tubers were sustainably grown by farmer Karen Norman-Boudreau on the Laguna de Santa Rosa in Sonoma County, CA. Farmer Karen is a steward of the watershed and cares for the land by fostering bio-diversity. They are brought to chefs and retailers throughout the Bay Area by F.E.E.D. Sonoma.
