This beautiful, variegated chicory variety is a relative of the more familiar Chioggia Radicchio. It has a light green base, with red speckles, and all the boldly bittersweet flavor of its chicory family relatives. Bel Fiore Raddichio is great chopped raw into a salad, or halved and grilled to bring out its sweetness. If used raw, pair with acids and fats to cut the bitterness.
