Emmer & Co.'s heritage chickens are bred from the oldest genetic lines of chickens in North America. They grow slowly and range freely for about 4 months, quadruple the conventional poultry industry standard. Because the birds are able to move freely, exercise, and enjoy a healthy, natural diet, they are lean, with well-developed legs and a much smaller proportion of breast meat than you may be used to—in flavor and texture, they're more like a duck or a game bird than a typical broiler chicken. They may be small, but their taste is mighty! We recommend slow-roasting or braising these birds and using a meat thermometer to get them to just the right temperature. Be sure to save all the scraps, bones, and skin for the most flavorful and nutritious stock you'll ever make.
