All the same wonderful Brassica taste, now in bolder colors! Orange (aka Cheddar) Cauliflower can be used any way you would White Cauliflower: mashed, steamed, roasted, crumbled, etc. This variety was first found as a chance mutation in Canada in the 1970's. After years and years of cross-breeding to allow the variety to hold more and more betacarotene, Cheddar Cauliflower finally made it onto more and more farms as a colorful addition to their fall and winter Brassica lineup. It generally contains about 25% more Vitamin A than its more common counterpart.
