Step 1
Bring a large pot of lightly salted water to a boil. Meanwhile, roughly chop the kale and add to the boiling water. Allow the water to return to a boil, and when the kale is just tender, strain and allow to cool. This can be done a few hours before serving.
Step 2
Make the vinaigrette: combine ¼ cup red wine vinegar and a pinch of salt in a small bowl. Zest the orange, and add it to the bowl along with 1 tablespoon honey. Whisk in 1 cup of olive oil and set aside. (You can make the vinaigrette a day ahead and store in the fridge! Just return to room temp before serving.)
Step 3
Add the well-drained kale to a serving bowl and mix with a splash of the vinaigrette. Slice the pears (avoiding the core) and add to the bowl with the kale. Stir vinaigrette well, then add a bit at a time to the salad until the greens are coated and toss. Finish with a squeeze of orange juice, and sprinkle pistachios and pomegranates evenly over the kale and pears.
