Burger night isn't just for carnivores. Fire up the grill if you feel like it, but on a busy weeknight, just break out your favorite cast-iron skillet.

What You’ll Need
Olive oil
Makes 4 servings

Step 1
In a cast-iron skillet or frying pan over medium-high heat, warm 1 tablespoon olive oil. When the pan is searing hot, add the veggie patties and cook, turning once, until browned on both sides, about 6 minutes total or according to the package instructions. Transfer the patties to a plate and set aside and keep warm.
Step 2
Wipe out the pan and return it to the heat. Add the buns, cut-side down, to toast until warm, 1 minute. Thinly slice the red onion crosswise into big rounds. (If you like, you can brush the onion rounds with oil, and sear until marked on both sides, about 5 minutes.) Pit, peel, and slice the avocado. Set out the sprouts for serving.
Step 3
To build the burgers, place the buns on plates and top with the veggie patties, red onion, avocado, and sprouts. Serve warm, with any of your favorite fixings.
