Step 1 Heat a splash of vegetable oil in a wide skillet over medium-high heat. Remove the steak from its packaging, pat dry, and add to the pan once hot. Cook for 3-4 minutes, then flip and cook for another 3-4 minutes. or medium-rare, cook 2-3 minutes), until a crust has formed on both sides and the steak is cooked to your desired doneness. Allow the meat to rest for 5 minutes.
Step 2 Wash and pick the mint and set aside. Wash the radishes, cucumber and carrots and peel if desired, then thinly slice each vegetable. Transfer to a large bowl, and add the pea shoots and mint. Toss everything together with soy-ginger dressing to taste.
Step 3 After the steak has rested, slice into strips and arrange on top of the salad.
