Hull and quarter 2 strawberries. Place the strawberries into a tall glass and muddle to crush the fruit slightly. Stir in 1 ounce strawberry shrub, ½ ounce lemon juice, and 2 ounces white vermouth until combined. Add a few ice cubes, top with sparkling water, and serve cold.
