Makes 4 to 6 servings
Whatever protein you might be throwing on the grill, round it out with these ultra fresh veggies and sauces, which only get sweeter with a little fire and smoke. Shuck the corn. Cut the zucchini and summer squash in half lengthwise. Cut the peppers in half or leave them whole, depending on size. Cut the peaches in half and remove the pits. Drizzle everything with olive oil and season with salt and pepper. Then just toss it all on the grill, and cook until sweet and tender. Serve warm, with the salsa verde and garlic aioli for drizzling.
