Slow Cooker Carnitas with Pickled Onions

Product Details

Time: 20 min active, 4 to 8 hours total. Makes 4 servings.

Juicy shredded pork is perfect for folding into warm tortillas with a drizzle of salsa. For more texture, after slow cooking, you could sauté the pork until crispy at the edges, but it’s delicious either way.

What You’ll Need

Makes 4 servings

4 to 8 hours total time


Step 1

Peel 5 cloves of garlic. Generously season the pork shoulder with salt and rub all over with 1 tablespoon of the spice mix. Place the pork shoulder in the slow cooker, pour 1 cup of beer or water into the bottom, and scatter the garlic cloves around. Cover and slow cook until fork tender and falling off the bone, on the low setting for 8 hours or high setting for 4 hours (see note below). 


Step 2

Toward the end of cooking, chop the cilantro, including some of the stems. Cut the limes into wedges for serving. 


Step 3

Just before serving, in a dry pan over medium-high heat, flash the tortillas for 30 seconds on each side. Wrap them in a clean towel to steam through and keep warm.


Step 4

When the pork is ready, transfer it to a cutting board, and remove and discard the bone. Shred it with two forks, smashing any garlic cloves into the mixture. Transfer the liquid and fat from the slow cooker into a pitcher and let settle and separate, about 5 minutes. Use a ladle to skim off some of the fat. Return the shredded pork to the slow cooker, and pour the juices over to moisten, 2 minutes. Season with salt to taste. 


Step 5

To build the tacos, place the tortillas on plates, and fill with the carnitas. Drizzle with salsa and top with the pickled onions and cilantro leaves. Serve warm, with the lime wedges for squeezing. 


Ingredient note: The pork may arrive frozen for freshness. Store it in the refrigerator to defrost before cooking. If you need to defrost it same day, place the sealed package in a bowl of cold water, and leave the tap running in a thin stream for about 30 minutes. Due to availability you may receive a different cut of pork.


Equipment note: If you’re using an Instant Pot instead of a slow cooker, settings vary. Set the Instant Pot to slow cook on the “normal” setting for 8 hours.
